The croissant factory is very structured with the employees. It is good that the lead baker or cook sees over everyone else and that consistency is the main factor. As a former chef and employee I do have compassion however we also have our jobs to do
yeah but they need to chill out a bit, it’s not like it’s Hell’s Kitchen. If I worked there, I would be so stressed out just because the boss is a speed demon. There needs to be a balance between good work and employee retention/happiness.

I appreciate the speed and dedication the croissant place had. i would get tired of hearing all the shouting, and they need to just chill out a bit and not make it seem like it’s a race. i’m hoping they were doing this just because they were being filmed and they wanted the owners to see their dedication. Prices there seemed very very reasonable compared to the cost of similar things in the United States. They appear to have the routine very organized. it reminded me of Moe’s Southwest restaurant where they shout “Welcome to Moe’s”!
I would hope that the bakeries acknowledge the importance of their employees with equitable salaries, that match their baking expertise with excellent results. パン屋が従業員の重要性を認識し、パン作りの専門知識に見合った公平な給与で優れた結果をもたらすことを願っています。

生地を捏ねて成型したり、焼いたりするのはどこも同じような手順なのに、やり方が各店違って面白い。2件目のクロワッサンファクトリーさんは、ラーメン屋さんとかお魚屋さんのように挨拶が元気いっぱいで並んでるパンのラインナップも最高。3件目のリヨンスイーツさんは黙々と丁寧にこなして安心出来る感じ。どの店舗も素敵です
